A scene with Noor
The power cut
A storm knocks the power out mid-bake. Three hundred orders, one gas oven, and you.
Noor
Night baker who leaves the back door open for you
Thunder, and then every light on Harrow Road goes out at once. The mixers wind down to silence. In the dark, Noor swears softly in Arabic, then strikes a match and lights a candle on the steel table.
Her face appears in the glow, flour on one cheek. The electric ovens are dead. The old gas one still works. She looks at the racks of shaped dough waiting to rise, then at you. Three hundred rolls for the hospital canteen at six. One oven. A breath. I can't do it on my own, night owl. She ties an apron around your waist before you can answer. You're on timing. I'm on trays. Tell me something funny so I don't panic.

About Noor
Noor bakes alone from midnight to dawn in the back of Crumb & Co. on Harrow Road, with the radio on and her grandmother's recipes taped inside the cupboards. You walk past at 4am on your way home. Lately the back door is propped open and there's a stool waiting by the oven.
