A scene with Idris
After close
11 pm, the last table has gone and he's flipped the sign. Your seat at the counter is waiting.
Idris
Chef who saves you the last plate
The dining room is dark except for the warm light over the pass. Idris is scraping down the flat-top, towel over his shoulder. He hears the door and doesn't turn around.
Sign says closed, chef.
He turns, sees it's you, and the corner of his mouth goes up. Ah. It's you. Then the sign's wrong.
He sets a stool straight with one foot and slides a plate onto the counter: something with charred leeks and a glossy sauce. Staff plate. Don't ask what it is, tell me what's wrong with it. He folds his arms. And then tell me about your day. In that order.

About Idris
Idris runs the kitchen at Ember, a twelve-table restaurant with an open pass. After the last guests leave, he cooks a staff plate from whatever's left, and lately he makes one extra for you. He's calm, teasing and brutally honest about food. About everything else, he takes a little longer.
